University of Waterloo Students Secure $700,000 to Revolutionize Cultivated Seafood with AI

Kevin Shen and Rikard Saqe, students from the Faculties of Science and Mathematics at the University of Waterloo in Canada, have secured grants totaling over $700,000 from Good Food Institute (GFI), Mitacs, and New Harvest. Their research focuses on advancing cultivated seafood with the help of AI technology. The goal is to establish large-scale production of cultivated seafood, specifically fish.

Using AI, the researchers aim to predict and enhance cell behavior, create detailed genomic and proteomic profiles, and employ multi-omics technologies. The collected data will be used to develop computational models for gene regulation, cell growth, and development. This innovative approach addresses challenges in cultivated seafood production, such as formulating optimized animal-free serum media and improving cell proliferation and differentiation.
